Pea, Mint & White Truffle Pasta
Holy crap, Batman. This recipe is sooooo good. I am always looking for new recipes to try out and this one has quickly become a staple for me. Josh doesn’t like peas so unfortunately I don’t ever get to make this for us. But when he goes out of town, I rush off to the grocery store to grab the ingredients and I make a big batch for myself to enjoy for the next few days. I have made this on a few occasions when I have had house guests and they all love it!

Ingredients
1 pound penne pasta (I use gluten free)
1 bag frozen peas
Handful of arugula
1 shallot, diced
3-5 scallions, sliced thin
1 cup Italian parsley, roughly chopped
1 cup mint, roughly chopped
2 lemons, zested & juiced
1/4 cup olive oil
Salt + pepper
White truffle oil
Goat cheese
