Josh has told me that these need to be on a restaurant menu somewhere. I will gladly accept that compliment. Have you ever read the meme about “if Cauliflower can be pizza, you can believe in yourself too”? Cauliflower has the best freaking ability to take on amazing flavor. I don’t make these nearly enough but every time I do, I am so satisfied. I apologize for the crappy photos taken on my phone. I forgot to document this dish the last time I was making it and snapped these before shoving the taco in my mouth.
Ingredients for 2 (approx. 6 tacos total)
- 1 large head of Cauliflower
-1/4 cup of Olive Oil
-1/2 tsp of Cayenne Pepper
-1 tsp ground Cumin
-1/2 tsp Smoked Paprika
-1/4 tsp of Garlic Powder
-1/4 tsp of Chili Powder
-Salt (pinch)
-Black Pepper (pinch)
-Corn Tortillas
-1 Avocado
-1 red bell pepper
-1 green bell pepper
-1/2 red onion
-1/2 bunch of cilantro
-1 Lime
What to do
-Preheat oven to 400 degrees
-Wash all produce (cauliflower, bell pepper, cilantro, lime)
-Cut Cauliflower into bite sized florets
-Cut bell pepper & onions into thin slices
-Shave leaves off Cilantro, discard stems, chop the cilantro fine
-Cut avocado into either slices, or diced for your topping preference
-Cut half a lime into wedges for garnish
-Combine bite sized Cauliflower florets, spices, olive oil & juice from 1/2 lime into a bowl and toss to coat (Cayenne Pepper, Ground Cumin, Smoked Paprika, Garlic Powder, Chili Powder, Salt, Pepper)
-Spread coated cauliflower on an un-greased baking sheet
-Bake for approx. 30 minutes
-Before Cauliflower is done baking, grill bell peppers & onions in a pan with a little bit of oil
-Warm corn tortillas
-Stuff tortillas with cauliflower, top with grilled veggies, avocado & cilantro. Serve with a lime wedge
